Inspectors observed multiple TCS food items in a prep top cooler reading above the required 41 degrees Fahrenheit. Specifically, mayonnaise was at 48 degrees, sliced cheese also at 48 degrees, and diced tomatoes registered at 54 degrees. The inspector’s notes emphasized that TCS food items must be held at 41 degrees or below.

While the Person In Charge (PIC) discarded the food items found to be above safe temperatures, the violation itself was not corrected during the inspection, indicating a need for systemic changes. As a result, the Certified Food Safety Manager (CFSM) is scheduled to meet with the health authority next week to develop a plan of correction and policy for these prep top items, exploring the option of utilizing a time policy instead of temperature for these specific items.
